Mix all ingredients. Make sure not to drain the water or oil from the can of tuna in cabio, use them in the salad mixture. We recommend serving in toast, or in a regular sandwich with lettuce, tomatoes and pickles. For a low carb option, serve sliced ​​lettuce.

Shrimp and Avocado Salad

1/4 cup white wine vinegar

1/4 cup grapeseed oil

3 cloves garlic, minced

1/2 lb medium shrimp, cooked, peeled and vein free

2 ripe avocados

Lettuce – preferably butter lettuce or red leaf lettuce

Lemon slices to decorate

Optional: 2 tablespoons chopped roasted nuts or pistachios

1 tablespoon chopped cilantro

Combine the oil, vinegar and garlic in a bowl.

Chop the shrimp into 1/2 inch pieces and add to the oil mixture.

Place lettuce leaves on individual plates.

Cut the avocados in half and mix with the shrimp.

Sprinkle nuts and coriander (optional).

Serve with lemon slices to decorate. You can serve this together with vegetables or cottage cheese.
